2 tsp white vinegar, 
rub on overall of the pork.
Keep in fridge overnight, do not cover)
Next day mix 5 spices, sea salt & pepper, this mixture rub on overall of the pork.
Keep few hours in fridge (do not cover)
Cover the top layer with salt
Put in oven for 170d (depend on ovens) for 1 hour (underneath put water)
Remove top layer of salt
Bake another 20min at high heat 230d to create the crispy effect.

99 carbornara
Garlic n olive oil. 
Add 1 spoon of flour 
Add fresh milk
Add spaghetti (boil 13-15min barilla brand)
Put in seafood or bacon  

98. Salad by Lucy
Peach, apple, potatoes cube
Mix mayonnaise & fine parsley topping. Put in fridge

97 Pumpkin soup
Boil w onion, add mix herbs.
Blend. Cream.

96. French toast
2 eggs
1 brown sugar
Bit cinnamon
Fresh milk 2 tbspoon
1 spoon olive oil
Put bread on mixture 
Put bit butter on pan, fried bread.

95. Grille chicken breast
Marinate chicken breast:
1/2 pepper, Lemon juice, 2 honey
Salt, Italian herbs, garlic mince, 1.5 olive oil
Cooking:
Put butter on medium fire.
3min then flip over another 3min
Serve.

94. minced pork with tai tau Choy (ttc)
Soak ttc 15min. Remove water n taste ttc. Not too salty
Blend in with minced pork. Add in onion oil, bit water, bit black sauce. Bring to steam 20-30min

Archovies with garlic soup
Remove after boiling for 1-2 hrs 
Put in cut slice mushroom 
Add in pork slices (marinated)
Boil mee (which put aside earlier) to be added inside the soup
Add ubi flour & egg.

20min in boiling water
10min off fire, take out
Put Salt & sesame oil

Soup to add 1/2 SAR kot
Onion leave to garnish

Fry Ginger w sesame, add soya sauce. Pour on top, add but soup if too dry...

85 Dry rendang chicken by Lucy
Same as acar plus blue ginger, leave. Plus chicken + 2 Santan. 1 big pot. 1 1/2hr hour, stir own & off. 
Lastly kerisik. 1/2 kelapa
Gula Melaka 2 spoon.

84 Acar by Lucy
Hot water w bit salt.
Put in carrot, long beans, cucumber marinate w salt, throw away (1-2min)
Shallot 1 bowl blend.
10 dry chili soften, +3 fresh chilli)
1/2 clove garlic, 
2 kunyit, Belacan 1spoon, at wok blend together. Tumis till golden brown. Put 5 spoon sugar,3 limes.

 fry kacang, blend small, aside.

83 Mee hoon by asp
Fry shrimp, minced pork, mushroom, cabbage, water, put in meehoon, add soya sauce & black sauce. Bury meehoon n cover lid. Salt to taste.

82 Vegetarian dish by cath see 7/14

Use wok. 5 slices ginger, 5pcs HK quality more..."lamyee" with its little bit of water. Fry
The wanyee & mushroom slices, kam-cham, tau-fu pok, add water 2-3 bowls. Once boil, add sugar 2 tablespoon, veg oyster sauce 1tsp, soya sauce. 

Boil n add in long cabbage 'Wong-nga-pak' cook/'mun' then taste when almost soft, adjust the taste.

Put in "tong-fun". & fu-chuk. (Soaked earlier) Caution: bottom burn. Lower heat. Simmer to soften.

Note: vegetarian never use garlic but ginger

Wanyee n mushroom, bitter gourd, minshi n black tow-see bit only.

80. Chic liquor

Oil + sesame oil: Fried w ginger, add chicken, add bit liquor to fry.., then cook w water, add liquor to cook & boiled. Take up.

79. Chic with pak-hub

Chic breast shred marinate w salt, huatiao wine, corn flour
+ mushrooms
Wolfberies + pak-hub, salt & sugar To taste, drizzle w sesame oil b4 serving 

78. Char Siew
Salt, sugar, 5 spices, pepper, Soya sos to marinate

Roast it.

77. Fish Acar

3 shallots, 2 garlic, ginger
2 green chili, 1 red chili, 1 big onion

Mix fish with tumeric power and salt
Then fry, put aside
Put abv ingredient to fry till fragrance
Add asam jawa water, tomato, tumeric powder
When boiling, put in fish, off fire.

76. Fish with Pineapple

Cover fish with corn flour & salt, fry, put aside
leave 2 spoon on pan, put big onion & garlic till frag.
Put pineapple, tomato, red chili, mixed
Add in corn flour water.
Pour everything on top of the fry fish.

75. Steam prawn w liquor
Salt n liquor to marinate 5min
Plate- put blend 1 egg 1:2 water + soya sauce
Steam 3-4min

74. Olio glio
Can put ham etc

Olive oil & butter
Add minced garlic + salt

Then put in spaghetti + chili flakes+ black pepper + mixed herb + garlic spray, garnish w parsley

73. Malay taufu 
Olive oil, Garlic smash, shallot4, red chili, tauchu lada Putih salt then taufu square, then vege 

72. Pita bread roll
Marinate chic: smash garlic, olive oil, lime, black pepper. Fry.
Salads:
Salt lime lada cheddar cheese grated. Avocado smashed 
Then:
Pita bread cover chic, lettuce, salad, sour cream, topping grated cheese

Lime juice, Black pepper, olive oil salt
Breast thin, marinate slice onion, garlic, lime, olive oil, kicap, oyster sauce, black pepper, 
WRAP: 
Ubi (sinkong) to fry. 

70. Fry kangkung belacan
Garlic, onion 3, 2 Chilis, Cili padi, 1 inch belacan, 2 spoon oil, salt

69. Steak by mom
(All icy water taken out first)
Slices hammered
Black pepper, soya sauce, bit of liquor 
Tapioca flour to marinate 
1 spoon of water to rub to soak
Add anor 1 spoon to rub again

To fry, put bit of corn flour.

68. Pumpkin soups
Butter, Onion (5min)n garlic 2cloves, add pumpkin cubes n chic stock, n water, simmer 20-30 water. Season w salt n pepper. Blend, cream n reblend
Preheat 180deg
Cinnamon nutmeg n sugar n olive oil for croutons to bake 7 min. Aside. Garnish w mint


67 Soba 
Soya sauce, vege oil, ginger, pepper n salt,

Put soba (10-15min boiled) + Sesame seed (3-4min toast), spring onion, coriander, then add abv sauce,
Garnish w seed weed, sesame seed

66. Salad by Ling
Mixture of salad 
Tomato, vege, cucumber, carrot
Add the sesame Soya, sweet sauce
Honey & lemon juice

1/2 pkt Rice flour 250g
150g flour
10 eggs
1 Coconut milk 350ml
Sugar 1 bowl
1 spoon corn flour
Google
250g rice flour
4 table sp all purpose flour

400m coconut milk
1/4 tsp salt
64. Taufu kang  (mom)
Mushrooms + Crabmeat + Prawn + carrot + tapioca flour + egg, pepper & salt.
Black vinegar 

63. Duck (mom's recipe) 
Duck marinate with 5spices & salt (keep aside)
3 lemon grass bruised, fried, aside
Fry 1/2 cooked Shallot - one big bowl (More the better) aside
2 soup spoon of sugar till bubble.. Add the shallot, l grass, add black sauce, water, then put in duck.

62. Sea plant dessert
1 bowl (soak overnight)
Red dates 15
Big date 4-5nos
Pandan leaves 10pcs
All ingredient boil for 3 hrs 

61. Steam eggs 
1:2 ratio water
Cover w alum foil
Steam for 8 min ( put chopticks as gap between wok n cover) 
Med high heat
Topping soya sauce + onion leaves.

60. Quiche
5 eggs
3/4 cup vege oil
1 cup of raising floor (sieved)
1 cup of cheddar cheese
Salt/pepper/mixed herbs (to taste)
A) 1 can ayam chilli tuna
1 small can corn*
1 pepper*
Broccoli *
1 onion*

B) ham + cheese + bacon + onions
Bake 30 mims 200degree

59. Mutton curry
Onions n ginger 1big bowl 
Herbs
Curry Powder 2 bowls
Curry leaves
Mutton 3 kilo
Water or santan
2 hours
Add thick santan 

58. Baked nugget (Ida 7/13)
Take only 18 mins 
(1st 6mins over turned d nugget). 

put on those holes tray tht u used for steaming fish so tht can drain oil when bake n not sticking. Do not defrost nugget n go straight fr freezer to oven so tht not messy. Oven to preheat 5mins. Temp 220 degree

57. Lui cha (mom)
Soup blended sesame, tok-SI-heong tea, peanut & mint & salt
Variety vege cut fine.
Garlic smatch n fry vege, add bit water & salt, close cap (don't keep turning). Soften. Serve.
Choi-po & shrimp
Tauhu square (not too much oil)
Caution: when boil soup must watch closely..danger of overflow when boiled!!

56. Steam salty fish with Pork
Salty fish fried.
Press on slices of pork then put slices of gingers.
20-30min

55. Lui cha
Soup: peanut + sesame + tea leaf + mint 
Fry individually, beat fine using dry blended 
Then use fruits blender w water, blend all w salt.
Put paste w hot water, add on progressively.. Caution: when boil can overflow, so be watchful.

Coi-pu, shrimp, long bean, Shu-cai, fu Mak, Choy Sam. 
Pound slightly garlic, vege (cut tiny small) bit water n salt, flipped n covered, cooked v fast. 

54. celery lingau 
Stir fry w sliced lingau(water lily) with sliced carrot and dry cuttlefish v nice. 
Can garnish tossed almond on top too:)

53. Black chicken Herb soup (tai-San)
Boil for 3 hrs - min shin?

52. Vege salad
Variety vege, sauce: balsamic, shallot chop small, olive oil,salt, black pepper

Variety of fruits, cut small, add lychees & syrup, mints , stir n keep in fridge

50.  Mince pork with mushroom potatoes soup (Cathy)
Blend above & bit of celery. Add cream or milk/starch. Lots of pepper, Salt.
Add slice of mushroom on top for good look.

49. Roast chicken (Geneva-cyn 1/6/13)
Salt, black pepper, lots of herbs, coated with cooking oil. Add water...(0use foil if preferred)
Baked 20min, add bit water + turn for anor 15 min

48. Spaghetti

Onion, garlic, celery, carrot, mushrooms
Beef mince 
1/2 cup red wine
Tomato chunk n purée 2spoons
Herbs + oregano + 1tsp castor sugar
Milk 
Salt , black pepper 
2hours 
Paramesan topping

47. Boil eggs
Boil water together w eggs,
 when water boiled off fire n leave for 10mins. Take out n serve. 

46. Indian salad
Pineapple, shallot, chili, yogurt or santan, salt

45. Mayo chicken
Marinate namyee+ egg
Cover w tapioca flour 
Fried chicken
Squeeze mayo evenly

44. Blueberry Cheese cake
Oreo + butter 250g mixed, flatten & keep in chiller 10min
Cheese n whipping blend for 5min, add to abv, flatten
Immediately add blue berry on top, keep for 3-4 hours.


43. Lala
Salt water normal 1 hour soak
Then Wash
Garlic & ginger & min Shi fry
Add lala to fry, covered n once all open then ready to serve 

42. Shepherd pies
- beef into cubes
High heat to seal the beef with little oil. Half cook
Sauté onion in low heat + herbs
Till fragrance, add in beef, water or beef stock.
Add 1/2 red wine into med heat abt 10min. Thicken with corn flour& cream
Boil potatoes, smatch with salt n butter, pepper
Beef bottom. Potato on top. Grated cheese on top. 
Bake on high heat230 deg for 1/2 hr. 

41. Macaroni
Ap easy way: butter, cheese,cream, pepper/salt/herbs, parsley
15 min bake cover w alum foil

pound pasta
1/2 cup butter (4 ounces)
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne
2 cups milk
2 cups light cream (half & half)
5 cups cheddar cheese (about 1.2 pounds)
Onions/garlic and parsley
1 box (10 oz) cheese crackers

Bake 325 for around 20 minutes


40. Pizza crust

2eggs + water 350ml
3 tsp butter / olive oil
900ml (2x450ml) high protein flour
1 tsp wheat sour
1 tsp softener
3 tsp brown sugar
1/2 tsp salt, 1 tsp yeast
Menu 8 (1 hr 30 min)

600ml water
7spoons kefir (spoon soup size)
3 1/2 spoons brown sugar

1  1/2 cup sugar
1  butter melt soften
Blend first the 2 items 
5eggs add 1 by 1
3 cups Mfm flour (add, don't blend so much more to mix)
1/2 cup water or HL milk
Last, add raisins (w flour, won't sink)
40 to 45min bake 175degree

Cereal prawn

Fry prawn, put aside
0.75 cup cereal, 1.5 tsp milk powder, 0.5 tsp sugar & salt

300g (8) prawn (paper towel, egg 1/2, 1.5spoon flour toss.
Max heat
Butter fry (warm/med wok) + curry leaves + cereal to golden brown
Mix well

36. Coleslaw

Cabbage, carrot, 
spring onion, 
2 tsp mayo, 2tsp sour cream
2 tsp vinegar, 
salt, pepper, mustard
Cover n chill

35. Roast shrimps n squids

Put olive oil + salt & pepper
400 degree 7 min prawn till firm n pink & 15min squids 

34. Steam fish

Boil water n let fish swim across
Add ginger on top
Steam 4 or 5 min depends on size
Sauce: shallot oil+ soya sos
Garnish w celery + onion leaves

33. Pancake utube

1egg + 56 castor sugar (1spoon) (2spn-bluebell recipe) 
0.2 liter milk (200ml) (3/4cup)
150g self raising flour (1cup) +3/4 tsp baking powder + 1/4 tsp salt +2tbsp oil
Blend n keep 1 hour, then cool

32. Char yuk with mushroom

Marinate pork w lam yue + ginger + shallots)
Soak mushroom 
Fry pork set aside
Cook mushroom w garlic mince n Lam yue, the add pork, then water, cook till soften

31. Baked chicken boneless

Either honey or BBQ sos
Heat up oven first, then put under high heat for 45 min to cook

2eggs (1/3), 2 times more water (2/3) beaten n add pepper n salt
Steam for 2mins, lift up
Add celery n onion leave

29. Seafood tauhu to fry

2spoons oil to fry 
Use paper towel to drain oil

28. Ginger Chicken

Marinate chicken - soya sos, pepper, 1 spoon of liquor)
2 spoons oil to fry gingers slices
When turn brown, add chicken, the black sos, don't put water first, stir fry 1/2 min close lid, few times
If very sticky, add hot water to stir fry
Seasoning : half bowl water+ pepper+ 1/2 spoon corn flour)
Add in at last to boil, then ready to serve.

27. Lingau soup & funkok (boil 2 hrs, 1 hr big fire, 1 hr small fire)
Refer to 25**
Peanut to boil first (optional) with pork for 1/2 hr
Put: lingau + funkok
Dry squid 4pcs, 3 pcs tai you Choy
Wolf berries 1 spoon
Red dates 15 nos

Fry fish, put aside
Put 2 spoon oil to fry ginger (longtitude)
Off-fire n add 2 spoons soya sauce
Pour on fish to serve

Red dates 15 nos
**Boil soup bones n wash clean with water.
Put all to hot water to boil.

24. Steam Brinjal

Cut Brinjal into 2.
Steam n remove skin
Fry shallots. Mix with : L&P sauce, soya sauce.
Put together n stir.

23a. Vege boil (Choy Sam)
Boil water+oil + sugar + salt bit
When water boiled, put vege, aft abt 2min, drain up N set aside
Sauce: fried shallot (alternative: garlic mince to replace shallots) + oyster SOS+ soya SOS mixed.
Pour sauce on the vege n mix

23. Vege - Broccoli

Boil brocolli for 1min (water + bit sugar+salt + oil) keep aside
Put ginger n garlic to fry, 
When color turn brown, fry prawns 
Carrot slices + peas to fry
Broccoli to add in, fry + add water
Seasoning: small bowl, water+ corn flour 1/2 tsp+ pepper) pour in, once boiled, take up to serve.

Tung Kua (1pc)
8 slices of pandan leaves
Boil 1 hour, then put Rock sugar boil 15 min.

21. Ribs porridge
Pork ribs, oyster, potatoes/carrot, tai tau Choy 1 pc, peanut must boil first to soften (optional) + salt

20. Tomato fish

Sauce: tomato sos, 1tsp sugar, pepper+salt+water
Fry onion (1 onion cut to 6portions), + sauce 
Boil n pour on fish, garnish w celery

19. Mui Choy chi yuk - mom8/12
🍉🍉🍉🍉🍉🍉🍉🍉🍉🍉
- soak muichoy (mc)in water, taste so that not so salty
- stir the mc @wok to dry b4 cooking. Then...
- oil in wok, put muichoy after cut into wok to cook
- put water medium (not overly) + sugar + pork (marinate with corn flour + soya Sos + pepper+sesame oil).

- 6 shallots + ginger w oil + big "kuk" spices + 1 scope flat curry powder+ leaves (6branches) + bit salt
- put Sotong in, mix n cover, repeatedly. 

2. Fish curry (mom chai's recipe)

- 8 shallots + ginger w oil + "lor pet me" for fish + small kunyit + 1/2 bowl of curry powder + leaves (6branches) + bit salt

- add archovies (if less fish) + 3 tomatoes cut small pcs + "lor pet me" for fish 
+ water to boil abt  10min
- fried tenggiri (cooked tenggiri, don't cook long)
- optional: fried brinjal & lady fingers
- add coconut or ideal milk, boiled short while

3. Brinjal  by sis cath

240 degree pre heat 
Put oil on top

4. Fry sweet potato (mom's recipe)

- 1 bowl Flour + 1spoon tapioca w water keep aside 1/2hr
- put flour little by little to stir so that no crumbles
- 1 spoon of oil

5. Duck (mom chai's recipe)
***********
Marinate duck with 1 spoon Ng hiong fun+ pepper, soya sauce + salt
- 2 to 3 hiong mau
A)  1 bowl shallot (till smelled) then remove all
B) 2spoons of sugar until "buih"
C) then pour in all inside & add little water, put black soya sauce, put duck 
D) the add again water to cover duck, when water boiled, slow down fire 
E) cook until soft tested with chopstick to poke to Chk softness. 
F) Est 1 hour to 2 hrs. (norm: 1  1/2 hrs)

- 1/2 bowl shallots + ginger w oil  + serai blend + "yellow ginger leave" (1 pc) +  curry powder + lime leaves (2 pcs) + bit salt

1 bowl shrimps 30g & 1 bowl shallots 100g
A) Fry  cube yam 300g, season with 5spices (1/4ts) fry shrimps, shallot separately
Rice flour mixed water split half + salt?
Half mixed cook n stir till sticky
Mix anor half mixture with half ingredient A but all yam
Then combine n put in 1 tray
Steam for 15min-40min in utube
Garnish chung n shallots

Mom's 10 eggs
500g sugar
Blend w blender till smooth. 
Boil double pot.  1 santan thick liquid

4 eggs beaten yolks only
45g palm sugar
200ml santan
Add palm sugar + 3tbsp sugar + 4 pandan leaves
Stir under low heat..stirring...
Off heat when coconut milk starts to simmer
Gradually stir 1/2 santan into the yolks
 then pour remaining yolks into coco milk
Turn on heat med low to low
Start thicken 5m (c side of pot) + 5min more
Remove pandan leaves

18. Ribs with tomatoes sauce

Marinate ribs (2hrs min), dry the ribs with paper towel.
Put soy sos, pepper, corn flour + 1 egg
- put bit flour to mix then fry till cook
- 2tomatoes chop, fry then put (mixture of tomato Sos + water + sugar) to boil
- add in the fried ribs + onion leaves (cut long) to quickly mix n rea
