Thermomix peanut & chicken soup
Peanut & Chicken Feet Soup Recipe by: Calis
1 hr 30 mins 2 pax Easy
INGREDIENTS
• Main Ingredients
1. 200gm chicken feet - wash and trim off claws
2. 150gm raw peanuts - soak in hot water 1 hr before cooking 3. 250gm pork ribs
4. 1 pc dried cuttlefish
5. 1 honey date
6. Salt
7. 1.5 litres of water
COOKING METHOD
Step 1
Wash chicken feet and pork ribs and put in bowl - fill with enough water to cover the ingredients

Step 2
Pour out pork ribs and chicken feet into coriander to drain off the scum water. Rinse mixing bowl and pour back ingredients and add in peanuts (drain off water) , cuttlefish and honey date. Add water to 1 .5 litre mark or cover all ingredients.
98o C 60m Spoon
Step 3
Add salt to taste and serve hot.

INGREDIENTS • Ingredients
1. 1 Whole black chicken , cut into 4 pcs
2. 1 pack of the mixed herbs
3. 1800g water or just cover chicken in simmering basket 4. Salt to taste
COOKING METHOD
Step 1
Place herbs and chicken in simmering basket and put into TM mixing bowl. Add water to cover all the herbs and Chicken not exceeding max point. Double boil at 99mins/95/speed 3

Tips
The herb pack can be easily purchased from any Chinese medical hall or even in supermarket. Using same method with different herb packs to get different effects of nourishment for the body.

Thermomix hong Pah
Pork Belly Shanghai Style
The name transliterated from Chinese is 'Red Stew Meat'. I do hope to get it with a shade of red besides coming out tops in the taste department.
I had done 2 rounds of cooking. The first 3 picture were from the 2nd session.
Ingredients
1) ⅓kg of pork belly
2) 2 tbsp oil
3) ½cm round piece of palm sugar
4) 3 tbsb Shaoxing wine
5) 1 tbsp soy sauce
6) ½ tbsp thick soy sauce
7) 2 cups water or more if needed
Preparations:
1) Cut pork into 1½cm thick. Blanch it to clear impurities. Wash and put aside.
2) Put oil in pan/wok and once heat is medium add the palm sugar. Let it melt.
3) Add the pork and fired till its browned.
4) Add the wine, soy sauce and thick soy sauce and water
5) Lower heat to low and cook till tender. Stir occasionally. About 45mins - 1 hr.
Tip:
1) Avoid oil as the fat from the pork will melt.
2) Make sure that there is sufficient water in the wok to simmer and get the pork braised to a tender state. Otherwise the pork will cook in oil and will be hardened as moisture is expelled from it.
3) The amount of sugar suggested with the dark soy sauce coupled with the usual sugar in soy sauce will make the dish sweet. You may want to cut down on the sugar, use a more salty soy sauce or add in some salt to taste

You’ll never have enough with this “restaurant-grade” dish ..
Plus it’s so convenient ..
Back from work , throw the marinated pork to auto cook for 30minutes that’s it .. all in a bowl , from the making of the marinade sauce!
Ingredients :
- 600g pork ribs
- 30g garlic
- 40g white part of spring onions
- 10g garlic
- 4tbsp tomato sauce
- 2 tbsp oyster sauce
- 1 tsp rice wine vinegar
- 20g rock sugar
- 50g water

Method A:
Ingredient A:
10 dried chillies (rinsed, soaked and deseeded)
10 shallots
1 stalk fresh lemongrass
15g dried shrimps (soaked)
5 garlic cloves
Ingredient B:
50g cooking oil
40g dried shrimps(soaked)
Ingredient C:
150g stink beans
2 tsp sugar
25g-50g water
Preparation:
1.Place A into mixing bowl, 20s/sp10. Scape down sides of mixing bowl with spatula.
2.Add B. Saute 4m/120°/sp1
3. Add C. Stir fry 4m/120°/Rev/sp spoon

Ingredients A:
4 shallots
2 garlic cloves
Ingredient B:
20g cooking oil
40g dried shrimps(soaked)
Ingredient C:
150g stink beans
2-3 tbsp sambal paste
2 tsp sugar
25g-50g water
Preparation:
1.Place A into mixing bowl, 5s/sp5. Scape down sides of mixing bowl with spatula.
2.Add B. Saute 4m/120°/sp1
3. Add C. Stir fry 4m/120°/Rev/sp spoon

Homemade Chicken Essence
1 Kg Ayam Kampong, chopped into bite size
10g Wolfberries
3 slices of Dong Quai (Angelica Root)
1000g Filtered Water
A pinch of salt to marinate the cleaned chicken
A ceramic bowl size able to sit into d Simmering Basket.
Method
1. Marinate chopped chicken with some sea salt and set side.
2. Place a small ceramic bowl into d Simmering Basket and set aside.
3. Place marinated chipped chicken into Mixing Bowl to crush. (10 Sec Speed 0 to 9)
4. Transfer bruised n crushed chicken into Varoma Tray, Cover n set aside.
5. No need to rinse mixing bowl n weigh in 1000g of water, insert Simmering Basket with ceramic bowl. Place washed Wolfberries n Dong Quai slices into d ceramic bowl.
6. Cover lid and stack Varoma Unit to steam. (60 mins / Varoma / Speed 2)
7. Take out Chicken Essence and use leftover liquid in mixing bowl to cook porridge.
8. Floss the chicken meat n discard bones for porridge toppings.
