Claypot chicken


To feed 4 persons

Half a Chicken, chopped into small pieces
1 chinese pork or chicken sausage, slice into small pieces

2 cups of jasmine rice
2 cups of water

For the marinate and sauce:
1 tbsp soy sauce
1 tsp sesame oil
1 tsp dark soy sauce
2 tsp sugar
1 tbsp corn flour
2 tbsp of water
1 tbsp of Hua Tiao wine
a few pieces of salt fish (preferably Mui Heong variety)

Make the sauce. Toast the salted fish for in a dry pan for a minute or so. Break it into small pieces and add to the sauce. Add the chicken pieces and marinate it for at least half an hour. If you are omitting salted fish, add another teaspoon of light soy sauce to the sauce.

Wash the rice. Put the water and rice into the claypot and start cooking in small to medium flame. After 10 minutes, add the chicken pieces and the sauce. Place the pieces of Chinese sausages on top of the chicken. Cook for another 15 minutes in small flame.

Garnish with chopped spring onions and serve hot.

A bowl of soup and small plate of sambal on the side will be nice.

Thermomix mapo taufu

Mapo Tofu by Thermomix

100g minced pork
1 tbsp soy sauce
1 tsp white pepper powder
1 tsp xiaoshing wine
(Marinate for 15mins)

20g garlic glove
10g olive oil

300g soft bean curd (cut into cubes 1cm)
2 tbsp oyster sauce
1.5 tbsp spicy bean paste
3 chili padi, sliced
1/4 tsp salt
5g sesame oil
10g water

2 stalks spring onion, chopped

1. Place garlic into mixing bowl, chop 5 sec/speed 6. Scrape down sides of mixing bowl with spatula.
2. Add olive oil and marinated minced pork , stir fry 5 mins/120C/reverse spoon speed.
3. Insert butterfly whisk , add bean curd, oyster sauce,spicy bean paste, chili padi, salt, sesame oil , water , stir fry 5 mins/100c/reverse spoon speed .
4) Garnish with spring onion

Thermomix buttercake By Patricia yam

TMX Butter cake. 
250 gm salted butter. 
200 g cake flour. 
1.5 tsp baking powder. 
180 gm castor sugar. 
5 Grade A eggs. 
1 tsp vanilla. 

 Preheat oven to 160..Grease a 8X8 pan. 

Crack eggs n set aside. 
sift flour n baking powder. 

mill sugar. MC/10s/sp 10. 
Add in butter. MC/10 sec/sp 6. 

Insert butterfly. 2 min/sp 4. 
At 1 min add eggs n vanilla. 
Add in flour 1min/sp 1. 
Scrape down. 30 sec /sp 1. 
Pour batter into pan. 

Bake 30 min at 160. 
Another 15 min at 180. 

On my own i added 3tbsp milk in batter.
