Thermomix pesto Sauce
l Pesto Sauce
Ingredients
80 g Parmesan cheese, cut into pieces (3 cm)
These two adjust according to your preference, collectively 30g:-
20g almond strips
10g g pine nuts (pine nuts has a bitter or metallic taste to some, so put less of this and more of almond or entirely almond)
These two adjust according to your preference, collectively 80g:-
60g fresh basil, leaves only
20g spinach leaves
1 garlic clove (optional)
100 g extra virgin olive oil /grape seed oil
¼ tsp salt
Preparation
1. Place Parmesan cheese into mixing bowl and grate 15 sec/speed 10.
2. Add pine nuts, garlic (optional), basil leaves, extra virgin olive oil and salt and chop 20 sec/speed 7. Serve immediately or transfer into a sealable jar and store in the refrigerator until ready to use.
