Pandan chicken

  • 500g of diced chicken thigh or breast meat
  • Pandan leaves for wrapping
  • Vegetable oil for deep frying

    For the dipping sauce
    Instructions
    For the chicken
    1. Cut the chicken into 4cm chunks, skin on.
    2. Blend the pandan leaves with 3 tablespoons of water. Extract the juice through a sieve.
    3. Marinate the chicken with the pandan extract and ingredients in B for 2 hours.
    4. Wrap each piece of chicken with the leaves. (Refer to the video in this post)
    5. Steam the chicken tor 10 minutes.
    6. Deep fry the encased chicken for 4 minutes until the exposed area of the chicken become golden brown.
    7. Transfer the chicken pieces to a paper towel to absorb any excess oil.
    For the sauce:
    1. Toast the white sesame seeds in a wok or pan without oil until they become light brown. Set them aside.
    2. Put the remaining ingredients into a saucepan and simmer over low heat until the sugar dissolves and the sauce thicken. Remove from heat.
    3. Add the toasted sesame seeds into the sauce and serve with the pandan chicken.

    nian Gao

    Ingredients:
    Glutinous Rice Flour 500g
    Gula Melaka 50g
    Brown Candy 350g
    water 500g
    cooking oil 10g

    1. add Brown Candy & gula melaka in to TM bowl, turbo, 2 sec (3 times).
    2. Add in water to cook, 7 min, 100 degree, speed 2. Then set aside to let the syrup cool.
    3. Pour the syrup, glutinous rice flour and oil into TM bowl, 1 minute, speed 4.
    4. Pour the batter into the mould and place in Varoma dish. Add 1500g of water into TM bowl. Stack up the varoma set. 80 minutes, varoma, speed 1.

    Peter Alex Ang friend recipe & chi keok suin

    "Chi-kiok-suin" Sour Pork leg by ASL
    Back leg chop
    Boil less than 10min to keep in freezer
    Defrost n fry w sesame oil & salt, 5 spoon of red sugar
    Sesame oil w 1 Kati of ginger, 1 bottle black vinegar, 4 spoons, 
    test to see if too sour, add sugar if need to 
    Cook 20min covered,
    Make hot 10 min, ready to serve

    Easy Char Siew Chicken recipe:

    Marinade 4 pcs chicken whole legs (min 4 hours) with:
    30g light soy sauce 酱油
    30g oyster sauce  蚝油
    30g brown sugar  红糖
    30g honey 蜂蜜
    20g dark soy sauce 黑酱油
    50g shaoxing wine 料酒
    Pinch of pepper  少许胡椒粉
    Dash of Sesame oil 少许麻油

    Place marinated chicken whole legs into tm bowl to cook 30 min / 120 °C / reverse / soft sp.
